RISE Agriculture and Food are using X-ray and neutron techniques at LSRI

RISE Agriculture and Food (RISE JoL) are using the new large-scale research infrastructures (LSRI), such as MAX IV and ESS, in food science. RISE JoL is also driving the use of these techniques in collaboration within the Nordic Lights of Foods initiative to offer unique methods and tools for the food industry in their research and innovation processes. Increasing demand for new healthy and sustainable high-quality food products requires a deeper understanding of the structure of raw materials and foods on micro and macro scale, which can be provided by X-ray- and neutron-based techniques and advanced microscopy. Knowledge about the relationships between structure, process conditions, and properties such as texture and taste are crucial for development of for instance foods based on new alternative sources of protein, foods with low salt, circular production and advanced process cleaning.
